Need some expert help. I have three weapons I can shoot the local competitions with. That is defensive pistol. steel challenge, IDPA and NRA action pistol. However I don't know what categories the pistols are in, other than they are all double stack, and major/minor power factor for the competitions. My pistols are CZ 75 9 mm fixed sights , SIG P226 40 S&W fixed sights, and Tanfoglio Witness Elite Stock II 40 S&W adjustable sights. All are as is from the factory. I would appreciate it if someone could tell what the classifications are for each in each type of competition. A partial answer would be welcome as well as a comprehensive one. Thanks, in advance.

I run the NRA Action Pistol matches at Otto Rd Range--the pistols you have listed would be acceptable for Metallic Sights Division or Production Division.
According to the rules metallic sights division is reserved for single action autos like 1911's or pistols that can be operated in the SA mode with safety engaged like a CZ-75.
Traditional DA/SA hammer fired pistols such as the SIG P226 is good for Production Division, as are all striker fired pistols such as Glock. The CZ-75 and the Tangfolio Witness can be used in production division if started with hammer down on first shot.

Would a gun from the pro shop be considered a production class like say a m & p performances center.

Depends on which type of match you are shooting in I guess. I do not know the requirements for all the types of matches available.. I know that it would most likely still remain as a production gun for my Defensive Pistol matches. I do not believe the performance center changes the basic mechanics of the gun just fine tunes it.
